1 egg
2 Tbs sugar
2 cups pineapple, finely chopped
1/2 tsp salt
1 1/4 cups flour
1 tsp baking powder
vegetable oil, for frying
1/2 cup honey
1 Tbs butter
1 tsp hot sauce
powdered sugar, for dusting
Directions
  1. In a bowl, beat egg and sugar. Stir in pineapple and salt. In a separate bowl, combine flour and baking powder. Stir into pineapple mixture until thoroughly blended. 
  2. Heat 1 inch of oil over high heat. When oil reaches 350° F, drop batter by the tablespoon into oil. Working in batches, cook for 2 to 3 minutes or until golden. Drain on paper towels.
  3. Stir honey, butter and hot sauce in measuring cup. Microwave in 10-second intervals until butter is melted; stir. Dust fritters with powdered sugar. Drizzle with sauce.
