


Ginger-Soy Salmon in Parchment

Ginger-Soy Salmon in Parchment

Ingredients
4 Tbs soy sauce
2 Tbs rice wine vinegar
1/2 tsp garlic powder
4 (18 x 18) sheets Simply Done® Parchment Paper
4 cups spinach leaves
1 zucchini, spiral or julienne
1 large carrot, spiral or julienne
4 (4 oz) farmed salmon fillets, skinless
4 tsp fresh ginger, peeled and grated
1 Fresno chile pepper, sliced
Directions
- Heat the oven to 350° F. In a bowl, combine the soy sauce, vinegar and garlic powder.
- Place a piece of parchment paper flat on a work surface. In the center, add 1 cup of spinach, 1/4 of the zucchini and 1/4 of the carrots. Place a salmon fillet on top. Spoon some of the sauce over the salmon. Sprinkle a teaspoon of ginger over it. Top with a few chile pepper slices.
- Bring the sides of the parchment up and over the salmon. Fold down to the middle. Fold up the top and bottom sections of the parchment to make a packet. Place the packet on a baking sheet. Repeat with remaining ingredients.
- Cook for 20 minutes. Carefully open the packets to serve.
