Ingredients
1/2 cup olive oil
1 large lime, zest and juice
2 Tbs red wine vinegar
1 Tbs honey
1 tsp salt
1/2 tsp black pepper
4 cups cooked quinoa (1 1/2 cups uncooked)
4 ears fresh corn, cooked and kernels removed (1 1/2 cups)
1 English cucumber, sliced into half-moons
1 cup grape tomatoes, halved
1/4 cup fresh cilantro, chopped
2 Tbs fresh chives, minced
4 slices bacon, cooked and crumbled (optional)
1/2 cup feta cheese, cut into large pieces
1 large avocado, peeled and sliced
fresh basil, for garnish
Directions
  1. Combine all dressing ingredients in a jar. Shake to combine. In a large bowl, combine the quinoa, corn, cucumbers, tomatoes, cilantro and chives. Add the dressing. Toss to coat. Refrigerate for at least 2 hours. When ready to serve, add the bacon (if using) and feta. Fan out the sliced avocado on top of the salad. Garnish with basil.
