Brushed with egg and topped with everything bagel seasoning, they bake up golden and flavorful—perfect for busy weekdays or slow weekend brunches.

Ingredients
1 cup Egg Beaters® Original (4 eggs) plus 2 Tbs, divided
1/2 tsp salt
1/4 tsp black pepper
2 tsp vegetable oil
3/4 cup cheddar cheese, shredded
5 slices bacon, cooked and crumbled (see note)
1 (8 count) can refrigerated flaky layers biscuits
2 tsp everything bagel seasoning
Directions
  1. Heat the oven to 350° F, and line a baking sheet with parchment paper. In a small bowl, lightly beat 1 cup of eggs, salt and pepper. In a skillet over medium heat, add the oil. Pour in the eggs. Cook (stirring occasionally) until firm but still moist. Turn off the heat. Stir in the cheese and bacon. Let cool for 5 minutes.
  2. Open the can of biscuit dough.
  3. Place each biscuit on the baking sheet. Make a small cut into the side of each biscuit, about halfway down. Use your fingers to make a small pocket inside the biscuit, trying to keep as much of the biscuit sides attached as possible. Place about 1 to 1 1/2 tablespoons of egg mixture into the pocket. Firmly pinch and seal the edges of the biscuit together. Reshape into a circle. Place on the baking sheet. Repeat the process with remaining biscuits and filling.
  4. Brush the biscuits with the remaining two tablespoons of Egg Beaters®. Sprinkle the everything bagel seasoning on top. Bake for 18 to 20 minutes or until the tops are golden. Serve immediately.

    Note: You can also easily substitute Owens® Pork Sausage for the bacon. Cook the sausage, and drain the grease before adding to the recipe.
