8 large carrots, peeled
4 Tbs olive oil
1 tsp salt
1 tsp black pepper
1 Tbs parsley, chopped
1 Tbs curly parsley, chopped
1 Tbs parmesan, shredded
Directions
  1. Preheat oven to 425° F. Line a large baking sheet with parchment paper.
  2. Cut carrots into long strips. Toss with olive oil, salt and pepper. Spread carrots in single layer on baking sheet.
  3. Bake for 20 to 25 minutes, or until carrots are cooked through and golden.
  4. Sprinkle with chopped herbs and parmesan.
