Ingredients
2 medium chicken breasts, cooked
1/2 cup mayonnaise
1/4 cup fresh basil leaves, chopped
1 medium lemon, juice and zest
1/2 tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp black pepper
1/4 cup pecan pieces
lettuce leaves or bread slices, for serving
2 radishes, thinly sliced (for garnish)
Directions
  1. Cut the chicken into 1/4-inch pieces. Add to a large bowl. In a measuring cup, combine the mayonnaise, basil, lemon juice, zest, salt, onion powder, garlic powder and pepper. Stir together with the chicken. Fold in the pecans. Refrigerate for at least 30 minutes before serving. Scoop onto lettuce leaves to serve or on bread for sandwiches. Garnish with radish slices.
