Ingredients
2 (8 oz) bags fresh sugar snap peas
1 red onion, sliced
2 cups grape tomatoes
4 Tbs vegetable oil
2 tsp salt
2 tsp black pepper
Directions
  1. Add all ingredients to a large bowl. Toss until evenly coated.
  2. Preheat a grill and grill basket over high heat. (See note.) Add the vegetables to the grill basket. Cook for 10 to 15 minutes (stirring or shaking occasionally) until the vegetables are charred and the snap peas are tender.
  3. Transfer to a serving dish, and serve immediately while warm.

    Note: If you do not have a grill basket, the snap peas, tomatoes and onions can be threaded onto skewers before grilling.
