Wood T. Brookshire and Helen Louise Rhein grew up in East Texas and were married in 1926. Two years later, they opened a small grocery store on the east side of the downtown square in Tyler, Texas. They believed it was their calling to serve others – customers, employees and communities – through the grocery business. Wood and Louise built their business on a strong foundation of core values around remarkable people, service, integrity, performance, grit and results. In the 1950s, the couple’s sons, Bruce and Woody, entered the family business, followed by third and fourth generations. Today, Brad Brookshire leads the Company as Chairman and Chief Executive Officer, and his son, Trent Brookshire, is Chief Operating Officer. Ninety years after the opening of our first store, Brookshire’s remains focused on creating and delivering exceptional experiences and value for our customers through “The Wood T. Way.”
While Brookshire’s became legendary for extraordinary service and involvement in our communities, Louise Brookshire was well known in East Texas for her signature recipes, including these family-favorite lemon bars. Mrs. Brookshire’s Lemon Squares
1 cup flour
1/2 cup butter, softened
1/4 cup powdered sugar, plus extra for dusting
1 cup granulated sugar
2 tsp lemon peel, grated
2 Tbs lemon juice
1/2 tsp baking powder
1/4 tsp salt
Preheat oven to 350° F. Mix flour, butter and powdered sugar in small bowl. Press evenly with hands into bottom and about 1/2 inch up side of ungreased 8 x 8 pan. Bake for 20 minutes.
Beat remaining ingredients in medium bowl on medium speed until light and fluffy. Pour over hot crust. Bake just until no indention remains when touched lightly in center, about 25 minutes. Let stand until cool. Cut into 1 1/2-inch squares. Dust with sifted powdered sugar.
