Dine-In: Loaded Mashed Potatoes


Mash potatoes are my favorite comfort food! Here is a recipe for loaded mashed potatoes:

Loaded Mashed Potatoes
Prep Time: 20 minutes
Cook Time: 20 minutes
Serves: 10

Ingredients:
4 lbs Yukon potatoes
1/2 tsp Food Club Salt
2 tsp Food Club Black Pepper
1/4 cup light butter
6 cloves garlic, minced
1 (5.3 oz) container plain Greek yogurt
1/4 cup shredded 2% cheddar cheese
4 slices turkey bacon, cooked, crumbled
1/4 cup chopped green onion

Directions:
Bring a pot of water to a boil and add potatoes. Cook potatoes until tender.

Once potatoes are cool enough to handle, cut potatoes into cubes. In a large bowl, add potatoes, salt, pepper, garlic and yogurt. Mash potatoes and top with cheese, bacon crumbles and green onions.

Dine In: Pork Chops with Spice Rub


Pork Chops with Spice Rub
Prep time: 5 minutes
Cook time: 15 minutes
Serves 6

Ingredients:
3 Tbs brown sugar
1 Tbs paprika
1 Tbs dried parsley
1 tsp garlic salt
1 tsp onion powder
1 tsp pepper
1/4 tsp ground red pepper (or to taste)
6 (3 oz) center-cut bone-in pork chops
3 Tbs olive oil

Directions:
In a small bowl, combine brown sugar, paprika, parsley, garlic, onion, pepper and red pepper. Evenly coat both sides of pork chops with the spice rub.

In a large skillet, heat the oil and cook pork chops, 3 at a time, about 3 minutes per side, or until done. If the skillet is large enough, all the chops can be cooked at once.

Dining-In: Rotisserie Chicken Nachos


Rotisserie chicken makes dinner a whole lot easier and faster!

Rotisserie Chicken Nachos
Prep Time: 20 minutes
Cook Time: 5 minutes
Serves: 8

Ingredients:
1/4 cup chopped onions
2 jalapeño peppers, diced
2 garlic cloves, minced
1 Tbs Food Club Extra-Virgin Olive Oil
1 tsp Food Club Cumin
2 Tbs Food Club Tomato Paste
2 cups shredded Brookshire’s Rotisserie Chicken
24 corn tortilla chips
1 cup 2% shredded Mexican cheese blend
1/2 cup Greek yogurt
1 firm avocado, diced
24 cilantro sprigs

Directions:
Preheat oven to 350°F. In a skillet, combine onions, jalapenos, garlic and olive oil; sauté until vegetables are tender about 5 minutes. Sprinkle cumin over vegetables and stir vegetables until well combined. Stir in tomato paste and let cook for 4 minutes. Add shredded chicken and cook until chicken is warm.

Place chips onto a baking sheet. Sprinkle cheese on top of each chip and top with chicken mixture. Bake chips for 5 minutes. Top each chip with Greek yogurt, avocado, and a sprig of cilantro.

Dine In: Red Potato Appetizer


Red Potato Appetizer
Prep Time: 45 minutes
Serves: 6

Ingredients:
12 small red potatoes
1/2 cup plain nonfat yogurt
1 Tbs minced green onion
1/2 lemon, juiced
1 garlic clove, minced
1 tsp dill weed
24 fresh dill sprigs

Directions:
In a saucepan, bring water to a boil and add potatoes; boil potatoes for 10-15 minutes or until tender. Let potatoes cool.

Cut potatoes in half, scoop centers out of potatoes and place potatoes into a medium bowl. Do not scoop all of potato out, just the center. Set potato skins aside.  Mix together potatoes, yogurt, green onions, lemon juice, garlic, and dill weed. Spoon yogurt mixture back into potato skin. Garnish each potato with a sprig of dill.

Dine-In: Tomato Soup and Rosemary Grilled Cheese


Grill cheese is the perfect side to go along with a warm tomato soup to help fight the cold in the winter. Heat up a bowl of tomato soup and make a rosemary grilled cheese to go on the side for a simple, but delicious dinner tonight.

Rosemary Grilled Cheese
Prep Time: 10 minutes
Cook Time: 10 minutes
Serves: 2

Ingredients:
1 Tbs butter, softened
1 tsp rosemary
1 tsp minced garlic (optional)
4 slices French bread
2 oz. 2% cheddar cheese, sliced
1/4 red onion, cut into rings
1/2 tomato, sliced thin

Directions:
Preheat oven to 400°F.  In a small bowl, combine butter, rosemary, and garlic and spread over bread. Place one slice of bread butter side down in foil. Place cheese, red onion rings, and sliced tomato on to bread. Place another slice of bread over cheese to make a sandwich. Wrap sandwich in foil and place into oven. Bake sandwich for 10 minutes or until cheese is melted.

Dine-In: Taco Soup


There are weeks that I know will be busy and sometimes it can get stressful on what to prepare for dinner. I know that picking-up food at a drive-thru is not in my best interest but I really don’t have time, or the energy, to prepare something to eat. When I know a stressful and busy week is coming my way, I bring the slow cooker out. It is easy to just throw some food in the slow cooker and not have to mess up the kitchen. Here is one of my favorite recipes for soup that I just add the cans of food to the slower cooker and let it cook.

With this recipe I can eat on this soup throughout the week and not worry about having a meal prepared for every lunch and dinner. 

Taco Soup
Prep Time: 10 minutes
Cook Time: 45 minutes
Serves: 10 

Ingredients:
1 (14 oz) can Food Club Stewed Tomatoes Mexican Style
1 (14.5 oz) can Food Club Diced Tomatoes with Garlic & Onion
1 (10.75 oz) can Food Club Tomato Soup
1 (11 oz) can Food Club Kernel Corn with Peppers
2 (15 oz) can Food Club Chili
1 (15 oz) can Food Club Black Beans, drained and rinsed
1 (15 oz) can Food Club Mixed Vegetables, drained
1 (4oz) can Food Club Diced Green Chilies 

Directions:
In a slow cooker, combine all ingredients and let soup simmer for 45 minutes-1 hour.

Here is a homemade tomato sauce that you can add to your favorite pasta with a little bit of cheese sprinkled on top.

Homemade Tomato Sauce
Prep Time: 10 minutes
Cook Time: 20 minutes
Serves: 6

Ingredients:
3 garlic cloves, minced
1/2 Tbs olive oil
1 (14.5 oz) can diced tomato with basil, garlic, and oregano
1 cup mushroom, chopped
1 tsp sugar
1/2 cup basil leaves, torn

Directions:
In a skillet, add garlic and olive oil; cook for 2 minutes. Add diced tomatoes, chopped mushrooms, and sugar; stirring occasionally for 15 minutes. Add torn basil leaves and cook for 5 minutes. Serve over your favorite pasta and shredded cheese.

Dine-In: Snowman Macaroni and Cheese


Snowman Macaroni and Cheese
Prep Time: 30 minutes
Cook Time: 20 minutes
Serves: 10

Ingredients:
1 lb elbow macaroni
1 Tbs butter
2 Tbs Food Club All-Purpose Flour
1-1/2 cup Full-Circle 2% Milk
1 cup shredded Monterery Jack cheese
1 cup shredded 2% mozzarella cheese
1/4 cup shredded Parmesan cheese
1/4 tsp salt
1/4 tsp ground black pepper
5 cherry tomato, halved
1 baby carrot

Directions:
Preheat oven to 350° F. In a large pot, bring lightly salted water to a boil and add noodles. Cook noodles for 9 minute; drain. Set aside.

Meanwhile, in a medium sauce pan, melt butter over medium heat and add flour; stir constantly. Slowly add milk and whisk until thickened.

In a large bowl, add drained noodles, milk sauce, 1/2 cup Monterery Jack 1/2 cup mozzarella cheese and 1/4 cup parmesan cheese; mix well. Pour noodles into round casserole dish. Sprinkle remaining cheese on top of noodles. Place casserole dish in oven and bake for 20-25 minutes.

Once macaroni and cheese is cooled, place 2 cherry tomato halved onto macaroni and cheese as eyes. Then place the remaining cherry tomato halves as the smile. Use the baby carrot as a nose.

Dine-In: Turkey


After Thanksgiving, cooking is the last thing on your mind. Here is a simple recipe that will help you get rid of your leftover turkey.

Turkey Tortellini
Prep Time: 15 minutes
Cook Time: 30 minutes
Serves: 6

Ingredients:
1 Tbs Food Club Extra-Virgin Olive Oil
1/2 yellow onion, chopped
3 garlic cloves, minced
1 green bell pepper, chopped
1/2 tsp ground oregano
1/4 tsp dried basil leaves, chopped
1/4 cup red wine vinegar
1 (20 oz) refrigerated tortellini
1 lb turkey, shredded, cooked
8 cherry tomatoes, halved
1/2 cup shredded parmesan cheese

Directions:
In a skillet, add olive oil and sauté chopped onion, garlic, and chopped bell pepper. Once vegetables are tender, reduce heat and add oregano, basil, and red wine vinegar. In a pot, add water and bring a boil. Add tortellini to boiling water; cook until you can slice it with a fork. In a large bowl, combine vegetables, tortellini, shredded turkey, tomatoes, and parmesan cheese.

Nutritional Information: Calories per Serving: 495, Fat: 15 g 6 g Saturated Fat), Cholesterol: 98 mg, Sodium: 598 mg, Carbohydrates: 50 g, Fiber: 3 g, Protein: 40 g.
