Product Talk: Mangoes

Did you know mangoes are the most popular fruit in the world? You might not think so if you base it on our local population, but when you factor in everybody in the world, mangoes have a lot of fans! They’re sweet and juicy and rich in fiber, Vitamin C and A, and taste kind of like a blend between peaches and raspberries.

Mango skin has an astringent quality, so you don’t want to eat the peel. And there’s a large pit in the center, so it can be a challenge to prepare until you get the hang of it. But this’ll get you started: take a sharp knife and cut around the pit on all sides, kind of like how you’d pit an avocado. Peel the skin away from the fruit and enjoy! Be warned, though: mangoes are so juicy that you may end up with sweet mango drippings running down your arms!

Mangoes make a great ingredient to fruit salads, or a topping for yogurt. But if you’d like a couple other ideas, here you go:

• Make a delicious salad by tossing fresh mango slices and mozzarella cheese slices with lemon juice and oil. Top with basil, salt and pepper.
• Sprinkle diced mango on a quesadilla before cooking to add a bit of sweetness to a savory dish.
• Make your own mango ice pops: puree fresh mango chunks in a blender. Pour into ice cube trays, stick in toothpicks or ice pop sticks and freeze.

Dine In: Fajitas

Sirloin’s on sale at Brookshire’s this week, and while nothing beats a big juicy steak, you can also whip up a batch of fajitas with a sirloin, too. Try this recipe!

Sirloin Fajitas
Serves 4
Prep time: 10 minutes; Cook time: 10 minutes

2 Tbs olive or peanut oil
12 oz top sirloin steak, cut into strips
4 cups fresh or frozen red and green bell pepper slices
2 cups onion slices
1/4  cup bottled fajita sauce
4 whole wheat tortillas
Shredded lettuce, cheese; sour cream; salsa

Heat oil in a large skillet. Over medium high heat, quickly cook the steak, peppers and onions—about 10 minutes, or until meat is done and veggies are crisp-tender. Stir in the fajita sauce and simmer until heated through. Divide among 4 warmed tortillas. Add your favorite toppings, such as lettuce, cheese, sour cream and tortillas.

Nutritional information:
Per serving: 458 calories. Total fat: 17 grams (4 gr saturated fat);  76 milligrams cholesterol; 453 mg sodium; 31 grams carbohydrates; 9 gr fiber; 36 gr protein.

Family Matters: Stormy Weather Disasters

In this part of the country, it seems like it’s always storm season. Tornadoes, hurricanes, ice storms and thunderstorms give us more than our fair share of potential disasters. If you find you must evacuate your home, don’t leave your pets behind. They’ll be much safer with you….and after the experiences of Hurricane Katrina in 2005, most emergency management resources realize that pets need consideration, too.

Check with your veterinarian, animal hospital, kennel or shelter to see if you can board your pets during a disaster, or make an arrangement with someone outside your area that you’ll care for each other’s pets in a crisis.

If storms seem imminent, keep a container of extra pet supplies, including clean water and medications, for quick access in an evacuation.

If you are waiting out a storm or other disaster at home, keep pets inside and offer comfort during any noise or confusion. Just your presence will help them feel better!

Salmon Fillets with Orange-Mango Salsa

Prep Time: 15 minutes
Cook Time: 10 minutes

Salmon Fillets with Orange-Mango Salsa
Serves 4

4 salmon fillets, about 5 oz each
1/4 tsp salt
1/4 tsp ground red pepper
1/4 tsp ground paprika
1/4 cup fresh cilantro, chopped
1 cup orange segments, chopped, with membranes removed
3/4 cup mango pieces, chopped
2 green onions, chopped (about 1/4 cup)
1/4 cup red bell pepper, minced
2 Tbs Full Circle Orange Juice
2 tsp Full Circle Olive Oil

Preheat oven to 350° F. Place salmon, skin side down, on a baking sheet coated with cooking spray. Combine salt, ground red pepper and paprika in a small dish. Sprinkle mixture evenly over salmon fillets. Bake 10 minutes, or until fish flakes easily with a fork. While fish is baking, slice orange segments and mango chunks into 1-inch pieces. Combine fruit, cilantro, green onions, bell pepper, orange juice and olive oil in a small bowl. Serve each fish fillet with about 1/3 cup of the salsa spooned on top.

Shamrock Pizza

Convert any Food Club Pizza into a St. Patrick’s Day dinner treat!

Just add some fresh green bell peppers that are sliced across the width into rings. Place these outlines of shamrocks all over and bake at the time given on the package.

It’s a very “clover” idea!
