When it’s this hot outside, we’re all screaming for ice cream!
One of our favorite ways to enjoy a cold, tasty treat during the hot summer months is to make ice cream pies.
Ever since they were little, it’s been a fun summertime tradition to take the boys to the store, let them pick out their favorite flavors of Goldenbrook Ice Cream, and make an ice cream pie creation out of what they chose.
Some concoctions are more, let’s say, creative, than others.
Now that my kids are teenagers, they can make an ice cream pie by themselves, but this is a fun family activity for kids of all ages. It’s easy to do with any number of kids, if you’re letting them pick their own flavors of ice cream.
All you need is a frozen pie crust like Nabisco Oreo® or Keebler® Graham Cracker, depending on what flavor ice cream you choose. Then, let each kid pick a flavor of Goldenbrook Ice Cream, like Peanut Butter Bash, Chocolate Cookie Dough or Praline Pecan. Also, let them pick out a topping, such as hot fudge, caramel or marshmallow fluff. If you REALLY want to get crazy, throw a candy topping per kid in the mix as well.
Grab a tub of Cool Whip® topping to finish it off.
When you get all your goodies home, you’ll be ready to assemble your pie, since the ice cream will already be softened from the ride home in the car.
Spread your first layer of ice cream into your pie shell. Top with your first topping and candy (optional). After the first layer, place lid or aluminum foil onto the pie pan, and put it in the freezer to harden. You might want to go ahead and put any other ice cream in the freezer, but pull out the next carton about 15 minutes before you’re ready to use it.
Repeat this process with all the layers of ice cream and toppings, finishing with a layer of Cool Whip®. Freeze for at least an hour after the final layer before it’s ready to eat.
