Shrimp Cocktail—Always Ready, Always Delicious

It's holiday time. You never know when someone's going to drop in, unannounced, to spread a little seasonal cheer. And when folks stop by, it's nice to have a ready-to-serve snack. If you keep the ingredients for shrimp cocktail on hand, you'll impress your friends and put your mind at ease, because you'll never be caught unprepared again!
Shrimp cocktail is one of those deceptively easy dishes. It's elegant, but when you get right down to it, it's almost too darned easy to even count as a recipe.
Always keep a package of large, peeled, cooked shrimp in your freezer. Keep a jar of prepared cocktail sauce in the pantry. When friends drop by, pull out the shrimp, run under cold water for a few minutes to thaw, and serve with the cocktail sauce. That's it!! If you have margarita or martini glasses, you can put the cocktail sauce in the glass, and hang the shrimp by the tail around the edge. Garnish with a slice of lemon or lime and you're ready to serve.
Now how simple is that? Don't tell anyone that this is your fall-back emergency recipe, and they'll always be impressed.

Ingredients:
1 (4 oz) pkg reduced-fat cream cheese, softened
1/4 cup cocktail sauce
2 English cucumbers (the long kind, wrapped in plastic)
1 (1 lb) package frozen shrimp (medium or large, peeled and cooked), thawed
Directions:
Combine the cream cheese and cocktail sauce in a small bowl. Set aside.
Slice the cucumbers on the diagonal, into ¼-inch thick discs. Spread each cucumber slice with about a teaspoon of the cream cheese mixture. Top with a shrimp.
Garnish with fresh parsley or a twist of lemon peel, if desired.
Makes about 24.
