The reason? Eating dinner together helps children do better in many ways.

 

The challenge? Fitting this into a busy schedule.

 

Every year on the fourth Monday of September, Americans take time to recognize the enormous importance of eating dinner as a family.

 

Statistics show that kids who eat with their families score better on tests and resist pressure to take drugs, alcohol and cigarettes. It's hard to believe that more meals eaten together could do that—and of course, it's not really the food that is magical. It's the interaction between family members that helps young people develop strong character.

 

That sounds great, right? But the big question is this: how does a busy family find the TIME to eat dinner together? What foods can you fix that won't just add to your stress level?

 

Here's an idea that will save you lots of time and will also provide a very healthy meal: salad. Not just a tossed salad, but a full-fledged dinner salad. Maybe even turn it into a salad bar—that'll really turn some heads!

 

Start with a bed of lettuce, or maybe several varieties of lettuce. The darker greens have more nutrition in them, but if you have picky eaters, go with what works. Iceberg lettuce is still good for you!

 

Mix in some raw veggies, again, tailored to the preferences of your family. This might include shredded carrots, cucumbers, tomatoes, bell pepper, shredded cabbage and sprouts. Then add a layer of protein. For most of us, this means meat: cooked sliced chicken, steak, pork, taco filling or even fish. And as a final touch, serve a few garnishes. Make them healthy ones like shredded low-fat cheese, olives, chopped nuts or dried fruit. Now THERE'S a salad! You really don't need a salad dressing, but if you do use one, don't use too much, and make sure it's low-calorie.

 

If you want to try the salad bar concept, put each of the ingredients in a bowl (or a divided bowl) and set them up on a countertop or in the center of the table. Give everyone a large plate and have them create their own customized salad masterpieces.
