Why eat vegetables?

Vegetables are superstars. They're overflowing with vitamins and minerals and are good sources of dietary fiber. They're naturally low in fat, sodium and calories and contain no cholesterol.

 

Vegetables have phytochemicals — natural substances that may help prevent conditions like heart disease, diabetes and some cancers. Many vegetables, such as broccoli, green peppers and spinach, are also good sources of antioxidants — substances that slow down cell and tissue damage.

 

Enjoy a wide variety of vegetables because different types provide different nutrients. For example, asparagus is high in vitamin C and folate. Carrots are an excellent source of vitamin A. And chicory is a good source of calcium, magnesium, riboflavin and vitamin B-6. Eating a variety of colorful vegetables not only ensures that you get more nutrients, but also helps make your meals and snacks more interesting.

 

Okay, you say, that's all well and good, but what if you just don't care for vegetables? The answer is to keep on trying veggies, in a number of ways. Maybe you can't stand boiled carrots, and can marginally tolerate them steamed, but think raw carrots are the very best! Same with celery. Many folks like raw, crunchy celery but shy away from it roasted or boiled.
