Marinated Carrot Salad

Gluten-free, low carb, low calorie
Prep time: 10 minutes
Serves 4
Ingredients:
1 1/2 c grated carrots (3 medium, or one pre-shredded bag)
1 Tbs rice wine vinegar
1 tsp sugar
salt and fresh ground pepper to taste
Directions:
Peel and grate carrots. Toss with vinegar and sugar; add salt and pepper to taste. Let marinate for 15 to 30 minutes and serve with meal.
