What's the Fuss About Gluten?

Gluten is an important source of nutritional protein. It's found in wheat, rye, barley and other grains. It takes a sharp eye to avoid gluten. Wheat-free isn't the same as gluten-free because wheat isn't the only source of gluten.

 

When a person with celiac disease eats gluten, the immune system attacks the lower intestine, limiting nutrient absorption. Untreated, this can lead to major medical issues. It typically takes 4 years for a person with symptoms to be diagnosed, because symptoms are vague and varied, and affects people differently.

 

Marinated Carrot Salad

A Brookshire's Best Recipe

 

Gluten-free, low carb, low calorie

Prep time: 10 minutes

Serves 4

 

Ingredients:

1 1/2 c grated carrots (3 medium, or one pre-shredded bag)
1 Tbs rice wine vinegar
1 tsp sugar
salt and fresh ground pepper to taste

 

Directions:

Peel and grate carrots. Toss with vinegar and sugar; add salt and pepper to taste. Let marinate for 15 to 30 minutes and serve with meal.
