What is Canadian Bacon?So what is Canadian bacon, anyway? Canadian bacon is more like ham than bacon. It' a cured, lightly smoked pork loin that's much leaner than regular bacon, so it's a good option when you want a slightly smoky, meaty flavor, without adding a lot of fat. It's a common ingredient in breakfast biscuit-type sandwiches at fast food restaurants.

 

Look for Canadian bacon in the meat section near other smoked pork products. It's often sold sliced in vacuum-sealed packages. Because it's cured and smoked, you can eat it without further cooking, but it's tastier if it's heated first by sautéing, grilling or baking.

Prep time:10 minutes; cook time: 3 minutes

 

These excellent little breakfast sandwiches are a great way to feature Canadian Bacon. They freeze very well and reheat in minutes in the microwave.

Ingredients:

12 eggs
3 Tbs. butter
12 English muffins, split
12 Canadian bacon slices, browned in a skillet
12 slices American cheese

 

Directions:
Cook the eggs as desired on a nonstick skillet, using 2 Tbsp. of butter. Make sandwiches with toasted English muffins, cooked Canadian bacon, cheese and cooked eggs. Cool sandwiches in the refrigerator. When cool, wrap each in a microwave-safe paper towel and freeze. Package them into heavy duty zipper-top freezer bags.

 

To heat, slightly unwrap the paper towel and microwave on high for one to two minutes until the cheese is melted and the sandwich is hot.
Options include ham, sausage or bacon instead of Canadian bacon.
