September Salad

September Salad It's September, but in our part of the country, we still have plenty of hot weather to endure. One of the best ways to cope with hot days is to fix a cool meal—and if you have some leftover cooked chicken, this dish will be the perfect way to use it up and serve a delicious meal!

 

 

 

 

Chicken Waldorf Salad

Prep time: 15 minutes

Serves 2

 

Ingredients:

1 cup cooked, diced chicken pieces (or a six-ounce can)

1/4 cup sliced grapes

1/4 cup chopped apple

1/4 cup chopped walnuts

1/2 cup reduced-fat mayonnaise

1 tsp lemon juice

 

Directions:

Mix all ingredients together and refrigerate. Serve as a salad, sandwich or on crackers.
