It's September, but in our part of the country, we still have plenty of hot weather to endure. One of the best ways to cope with hot days is to fix a cool meal—and if you have some leftover cooked chicken, this dish will be the perfect way to use it up and serve a delicious meal!
Chicken Waldorf Salad
Prep time: 15 minutes
Serves 2
Ingredients:
1 cup cooked, diced chicken pieces (or a six-ounce can)
1/4 cup sliced grapes
1/4 cup chopped apple
1/4 cup chopped walnuts
1/2 cup reduced-fat mayonnaise
1 tsp lemon juice
Directions:
Mix all ingredients together and refrigerate. Serve as a salad, sandwich or on crackers.
