QUICK AND EASY

CHOCOLATE TRUFFLES

 

Prep Time: 30 minutes, plus chilling

 

Makes about 24 

 

Chop 4 oz unsweetened chocolate into small pieces and melt in the microwave. Set aside. Use an electric mixer to combine 8 oz cream cheese and 3 1/2 cups powdered sugar in a large bowl. When fully mixed, blend in the melted chocolate. Cover the bowl and chill the dough until firm, about a half hour. Scoop into balls with a teaspoon and roll each ball in cocoa powder. Store in the fridge, and serve at room temperature.

 

CHOCOLATE-COVERED

PEANUT BUTTER BALLS

 

Prep Time: 30 minutes, plus chilling

 

Makes about 24 

 

Combine 1 cup each: powdered sugar, peanut butter, crispy rice cereal and coconut (optional) and roll into walnut-sized balls. Chill an hour. Melt chocolate bark candy coating and dip each ball in the chocolate and chopped nuts (optional). Place on waxed paper until set.
