Vegetable Trays
Create the foundation of an edible centerpiece with mounds of fresh and lightly-steamed vegetables on a large, pretty platter. Hollow out bell peppers, tomatoes, squash or citrus fruits, and fill with dip (see recipe below).
Arrange your favorite selection of vegetables in contrasting shapes and colors, such as cucumber rounds, baby carrots, tiny tomatoes, celery sticks, broccoli and cauliflower crowns, green onions, asparagus and snow peas. Mix and match to suit everyone’s preferences!
Guilt-Free Veggie Dip
Ingredients:
1 cup (8 oz) Food Club Sour Cream
1 (2 oz) pkg. dry ranch dressing mix
1 cup (8 oz) Food Club Cottage Cheese
Directions:
Combine sour cream and ranch dressing in a food processor or blender. With the motor running, add the cottage cheese, a little at a time, until smoothly blended. Chill well, and serve with your favorite veggies, chips or pita bread.
*Make a lower calorie dip by using reduced-fat dairy products!
