Mexican Chicken Casserole

Serves 4
Ingredients:
1 (15-oz) can black beans, rinsed and drained
1/2 cup chunky salsa
1/2 tsp ground cumin
3 cups leftover chicken pieces, cubed
1/4 cup shredded pepper jack cheese
Sour cream (optional)
Directions:
Preheat oven to 350 °F. In a small bowl, stir together beans, 1/4 cup of the salsa, and the cumin. Divide bean mixture among 4 individual dishes or casseroles; set aside. Divide the chicken evenly and place on bean mixture in each dish. Spoon remaining 1/4 cup salsa evenly over chicken pieces. Sprinkle evenly with cheese.
Bake for 15 – 20 minutes or until heated through. If desired, serve with sour cream.
