Meat loaf is an old family favorite, but it can take forever to make. And if you don't have a large family, you're stuck with way too many leftovers. Here’s a great mini-meat loaf recipe that can be made ahead of time and re-heated in the microwave. And go ahead and freeze a few, too.
Mini Meatloaves
Serves 4
- 1/2 cup ketchup
- 1 1/2 Tbs Dijon mustard
- 1 lb ground turkey
- 3/4 cup finely chopped onion
- 1/4 cup seasoned breadcrumbs
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/8 tsp pepper
- 1 large egg, lightly beaten
Preheat oven to 400°F.
Combine ketchup and mustard, stirring well with a whisk. Reserve 2 1/2 tablespoons ketchup mixture. Combine remaining ketchup mixture, turkey, and remaining ingredients in a large bowl, stirring to combine.
Divide turkey mixture into 4 equal portions. Shape each portion into a 4 x 2 1/2-inch loaf; place loaves on a jelly roll pan coated with cooking spray.
Spread about 2 teaspoons reserved ketchup mixture evenly over each loaf. Bake at 400° for 25 minutes or until done.
If you’re making the mini loaves and plan to warm them up in the microwave, make them all the same size so they will cook evenly when re-heated.
After microwaving, be sure to drain off the fat before serving.
