Make Some Springtime Fruit Treats!

Have you ever had a fruit pizza? They're often made on a large pizza-sized cookie, frosted with cream cheese or vanilla pudding, and then topped with a gorgeous layer of sliced and glazed fruit.

 

They're a beauty to behold, but they're also a big chore to complete. Here's a teeny tiny version of a fruit pizza that makes just a bite or two—perfect for younger children to make, because there is no oven to deal with. And because they're small and simple to make, your child can make a whole platter of them for the next fun gathering---and take all the credit for this great creation!

 

As the adult, you can help by laying out the supplies in an assembly-line fashion. Fruit needs to be sliced, and you can do that in advance, or provide a plastic knife and let younger folks take care of it. Be sure to spread out a towel or sheet of waxed paper to catch the spills and drips that are inevitable!

 

Skinny Minnie Fruit Pizzas

 

Ingredients:

Vanilla wafer cookies—one per snack

8-oz tub reduced-fat cream cheese spread, plain or fruit flavored

Sliced strawberries, peaches, kiwifruit, oranges, whole blueberries, raspberries, or your choice of fruit.

 

Directions:

Stir the cream cheese spread so that it is easy to work with. Spread a layer of cream cheese on the flat edge of the vanilla wafers. Top each with a slice of fruit or several berries. Allow to stand a few minutes and enjoy!

 

This is a great opportunity to talk about healthy snacking, and point out how these mini fruit pizzas are a good treat. The cookie is lower in sugar than most; the cream cheese has high-protein and calcium dairy in it, and the fruit is all-natural and extra healthy. You can also point out that different colors of fruit contain different properties, so eating a wide variety of colors is the healthiest way to enjoy fruit.
