Halloween Boo-tatoesWhen it's Halloween, you have to have spooky food. Vampire punch, eyeball salad, and witch's brew soup—they're all part of the fun!

 

If your Halloween dinner needs a little flair, maybe you'll fix bloody brains (crumbled ground beef in spaghetti sauce), rotten teeth (corn niblets) and for a beverage, serve up a big glass of mud (chocolate milk). And here's one more to fix: mashed potato ghosts.

 

If you want a quick-fix version of this dish, use instant mashed potatoes instead of regular spuds. Just be sure to make the potatoes fairly thick, using less milk or more flakes than the recipe requires.

 

If your Halloween cooks are young, you may want to make the mashed potatoes in advance and let the kids do the fun part: creating the ghost shapes and adding the eyes. One more hint: use tweezers to grab the black beans and put them in place. That makes it easier to place them exactly where you want them!

 

 

Halloween Mashed Boo-Tato ghosts

A Brookshire's Best Recipe

Difficulty Level: Moderate. Good for children with some previous experience. This dish requires adult guidance.

 

Ingredients:

2 cups white potatoes, peeled and chopped

2 Tbs skim milk

1 Tbs cream cheese

1 Tbs shredded cheddar cheese

1/4 tsp salt

1/8 tsp pepper

1/2 (19 oz can) black beans, drained

 

Directions:

Place potatoes in large sauce pan, cover with water, and bring to boil. Reduce heat to low. Cook for about 15 minutes or until soft. Drain water and add milk, cream cheese, cheddar cheese, salt and pepper. Mash with a potato masher or beat with an electric mixer until creamy.

 

Preheat oven to 350° F.

 

Scoop potatoes into a plastic zipper-top bag (note: use a freezer bag, because it is stronger. You don't want this bag to split!).  Cut a small corner from the bottom of the bag and use this bag to squeeze out mounds of mashed potatoes. Squeeze the potatoes onto a cookie sheet that has been sprayed with nonstick spray. Squeeze the potatoes to form ghost shapes that  stand upright about 3 to 4 inches high. Press two black beans into each ghost's head to create eyes.

 

Just before serving, warm the ghosts in an oven for about 5 minutes. Adventurous diners might like to squirt a little ketchup near the ghosts at serving time, to simulate blood.
