Grilled Fish, Anyone?

Grill fish the easy way: to place a fillet on a large sheet of aluminum foil with a few fresh herbs, a little garlic, some lemon slices and a splash of white wine. Carefully fold the aluminum foil into a packet and place it on the grill and cook until the fish is done.
If you choose a piece of tuna that is about 1 inch thick then it will grill in about 8 to 10 minutes, flipped once. This will cook the fish through to the middle, provided that your grill is good and hot.
You want to get the tuna off the grill before the surface starts to get crusty and burns. Unlike beef, lamb or pork you do not need to let tuna rest before serving. Get it off the grill and onto the plate right away.
Grilled Citrus Tuna
Cook Time: 10 minutes
Ingredients:
1-2 lbs tuna steaks
1 cup each orange and grapefruit juice
1/4 cup lime juice
1/2 cup dry sherry
1 tsp dried thyme
1/4 tsp cayenne pepper
1/4 tsp salt
1 Tbs paprika
Directions:
Mix juices, sherry, thyme, cayenne and salt in a shallow baking dish. Add fish and allow to marinate 2 hours in refrigerator. Preheat and oil grill. Remove fish from marinade. Place fish on grill and sprinkle with paprika. Turn after about 5-7 minutes and continue cooking for another 5-7 minutes.
