Giant Fireworks Cookie
A Brookshire's Best Recipe
Ingredients:
Nonstick baking spray
1 18-ounce roll refrigerated chocolate chip cookie dough
1 cup reduced-fat cream cheese, softened
1/4 cup powdered sugar
Decorations of your choice in patriotic colors: cut up strawberries and blueberries, red and blue cake sprinkles, M&Ms, colored decorating gel, etc.
Directions:
Preheat oven to 350°F.
Spray a 12-inch pizza pan with nonstick vegetable spray. Using your fingers, spread the cookie dough to cover the bottom of the pizza pan. Use pot holders to put the pizza pan in the oven. Bake for 12 to 18 minutes, or until golden. Remove with pot holders. Turn the oven off and let the large cookie cool completely.
Make sure the cream cheese is soft, so that it will mix well. Put the cream cheese in a medium-sized bowl and add the powdered sugar. Add a little sugar at a time, or else it will fly into the air and make a mess! Stir until the frosting is smooth. If you’d like a colored frosting, you can stir in 2 drops of your favorite color food coloring.
Use a plastic knife to spread the frosting over the cooled cookie. Decorate the cookie with your choice of toppings. Make a flag design, sparkly fireworks or splashes of red, white and blue!
Allow the icing to set up for 15 minutes and then cut the cookie into 10 wedges.
