Fish Tacos TonightSeptember is Family Dinner Month, and the 24th is Family Dinner Day. This is the perfect time to offer your family a new twist on one of the healthiest foods around: fish. Since most kids love crunchy foods, and since most kids also adore tacos, fish tacos are the ideal way to increase seafood consumption while keeping smiles on their faces.

 

Use your creativity with this recipe. Just about any type of firm fish will work, and you can use your favorite taco toppings to make this dinner exactly right for your family!

 

Family Dinner Night is sponsored by The National Center on Addiction and Substance Abuse (CASA) at Columbia University. Their research consistently finds that the more often children eat dinner with their families, the less likely they are to smoke, drink or use drugs. And that's how Family Dinner Night got started. The fourth Monday in September is set aside as a time to recognize and reinforce the value of sharing meals together.

 

Does the concept of shared dinners preventing drug abuse sound hard to believe? The CASA research points to closer family bonds, more intimate conversations, and a shared sense of family as ways to keep families connected and communicating.

 

As CASA points out, it's much more than just the food; it's the togetherness that matters.

September 24 is a great day to take time out and spend it with those you care most about! Whether you eat at home, in the park, or in a restaurant, it's the togetherness that really matters.

 

 

Fish Brocco-Tacos

A Brookshire's Best Recipe

 

Ingredients:

2 Tbs vinegar

1 Tbs olive oil

2 Tbs chopped fresh parsley

3 Tbs chopped fresh thyme

1 (16 oz) pkg broccoli slaw mix

1 small tomato, diced

1/2 onion, diced

1 lb fish fillets, tilapia, red snapper or cod

1 tsp chili powder

1/2 tsp cumin

4 flour tortillas

black pepper and salt to taste

 

Directions:

In a large bowl, combine vinegar, 2 tablespoons oil, parsley and thyme. Stir in the broccoli slaw mix, tomato and onion. Set aside.

 

Sprinkle the fish fillets with chili powder, cumin, pepper and salt. Sauté with remaining 1 tablespoon oil in a nonstick pan for 3 minutes per side, or until fish flakes with a fork. Remove from heat and cut into bite-sized pieces.

 

Warm tortillas according to package directions, or for crispier tacos, spray each tortilla with vegetable spray and heat in a skillet until lightly browned yet still pliable.

Spoon about 1/4 cup of broccoli slaw into the center of each tortilla. Divide the fish evenly among the 4 tortillas and fold each in half.
