Fresh or frozen, fish is a healthy food. Frozen fish is often just as high-quality as fresh, because it’s frozen right on board the fishing boat.
When you shop for fish at the Brookshire’s Fish Cove, you’ll see tags identifying the fish in the fresh case. If they say ‘previously frozen” or “fresh” you can trust that this is exactly accurate. And when in doubt, as the Fish Cove employee for the information you need!
Recognizing Quality Fresh Fish:
Proper display: on ice tables or in refrigerated units
Fresh, mild aroma.
Bright red or pink, clean gills.
Full, clear, bright eyes.
Shiny, brightly colored skin with tight, firm scales.
Firm flesh, elastic to the touch, clinging tightly to the bones.
No signs of browning or drying around cut edges.
Types of Fish You’ll Find at Brookshire’s:
Whole or Round: Whole fish just as it comes from the water.
Yields: 1-2 servings per pound.
Dressed: Whole fish, gutted with or without head.
Yields: 2-3 servings per pound.
Steaks: Cross-section cuts of large fish.
Yields: 2-3 servings per pound.
Fillets: Meaty sides of fish.
Yields: 3-4 servings per pound.
