Fancy Scampi!When the holidays are here, you sometimes need a fast, easy dinner idea that is also a bit fancier than most. You know the story—guests are coming over, or you're having a holiday open house, and you have to have something extra-nice to serve.

Seafood is an easy choice, because it's so sophisticated. Shrimp scampi is one of the most sophisticated dishes ever, but this recipe is done in the microwave. That means you'll have a dinner ready faster than you thought possible—and it still tastes delicious!

 

Shrimp Scampi

A Brookshire's Best Recipe

 

Ingredients:

1/2 cup butter

3 cloves garlic, minced

2 Tbs lemon juice

2 Tbs chopped parsley

Salt and pepper to taste

1 lb medium shrimp, peeled and de-veined

 

Directions:

In a shallow microwave baking dish, combine all ingredients except shrimp. Cook, uncovered, on high power for 3 minutes, or until butter melts and mixture is hot.

Add shrimp and stir to coat.

 

Cover with plastic wrap, venting one corner, and cook on high for 3 to 5 minutes, until shrimp curl and turn pink. Let stand, covered, for 3 minutes before serving.
