Double Duty DinnersSome people look at a roast and say, "What am I going to do with all those leftovers?" while other people look at the same roast and say, "Wow, look at all those leftovers!" You, however, can look at a roast and say, "Two meals for the price of one! Excellent!"

 

Some foods—especially meats—are born to be re-created into new dishes. With a little creativity and restraint—you have to actually save those leftovers and not eat them!—you'll learn about the joys of double duty dinners. Double duty dinners come in very handy on busy weekdays and are especially wonderful around the holidays. Do the "big" cooking when you have time on the weekend, and save the "hurry up" meal for an evening when you really need something fast and easy.

  • When you grill a batch of chicken drumsticks, fix extra. Later that week, shred the meat and mix with canned corn, black beans and shredded lettuce. Toss with salsa and Italian salad dressing and roll up in warm flour tortillas.
  • Fix a delicious flank steak one night, and use the leftovers for Philly Cheese steak sandwiches. Slice the steak, layer on split hero rolls and top with sautéed peppers and onions. Finish with sliced Provolone cheese and bake until the cheese melts.
  • Roast two pork tenderloins. Enjoy one right away and save the second one for barbecue pork sandwiches. Shred the pork, heat with barbecue sauce, and serve on toasted hamburger buns.
  • Fire up the oven for a big beef pot roast. The leftovers will make a great roast beef hash. Chop the meat into small pieces and put in a skillet with a package of hash brown potatoes. Once it browns, stir in a jar of beef gravy.
  • Grill or broil a tasty sirloin steak one evening, and slice the leftovers and serve on top of a lettuce salad.
