Crunchy Fish Bites
And they're baked, not fried!

We all need to eat more fish, because the Omega-3 fatty acids are so good for heart health. Older folks sometimes have a hard time making it a habit to eat fish several times a week, but if children learn this idea when they're young, it'll be as second-nature as drinking milk at dinnertime!
These crunchy fish bites are baked, not fried. That means you'll eat fewer calories, and the calories will have more of the "good" fats and no Trans fats—the very worst kind.
Because this recipe requires oven use, it also needs adult supervision.
Crunchy Fish Bites
A Brookshire's Best Recipe
Prep time: 15 minutes; cook time: 12 minutes
Ingredients:
1/2 cup cornmeal
1/2 cup Parmesan cheese
1/2 tsp garlic powder (optional)
3 Tbs olive oil
1 lb catfish nuggets, or fillets cut into 1-inch strips
Directions:
Preheat oven to 475° F. Coat a large baking sheet with nonstick spray.
Combine the cornmeal, Parmesan cheese and garlic powder in a medium bowl. Mix well. Place olive oil in a small bowl.
Dip each fish nugget or strip lightly in olive oil and then roll in the breading until well coated.
Arrange the fish on the baking sheet.
Put in the oven and bake until golden brown, about 10 to 12 minutes.
