Cool as a CucumberThere are dozens of cucumber varieties and most can be used interchangeably. In American markets, you're most likely to run across:

 

Picklers: short and blocky, with blunt ends and bumpy skins. Their firm texture makes them perfect for picking, but they're fine to enjoy raw.

 

Slicers: basic, all-purpose cucumbers, about 8 inches long with round ends and smooth to slightly knobby dark-green skin. These cucumbers are often waxed to protect them during shipping. Scrub well or peel before using.

 

English: seedless cucumbers, about 10 to 12 inches long. They're slender and often sold wrapped in plastic. Their thin skins, undeveloped seeds and uniform shape make them idea for adding to salads and using as a garnish. English cucumbers are sometimes called "burpless" because the lack of seeds makes them easier to digest.
