Christmas cookies are so much fun to make. Lollipops are so much fun to eat. Wouldn't it be great to put cookies and lollipops together and have a fantastic new Christmas goodie? Well, here it is: Cookie Pops!
Kids are naturally skilled at making treats like this, because they're also naturally creative. You'll be surprised at the unique combinations of red and green sprinkles they dream up! And the more adventurous ones may skip the sprinkles entirely and use other cute decorations to invent their own cookie pop creations!
Adults can help by organizing supplies so that children can dive right in. Adults can make sure the chocolate chips are evenly melted, and they can also supervise getting the decorated pops into the fridge. Other than that, the best thing a grownup can do is stand back and let the magic begin!
Christmas Cookie Pops
Ingredients:
20 vanilla wafer cookies
1/2 cup peanut butter
16 oz bag white chocolate chips
colored candy sprinkles, red & green combo and red
10 ice cream sticks
wax paper
Directions:
Spread peanut butter onto the flat side of the cookies. Place an ice cream stick into the peanut butter on half the cookies. Top with another cookie so the stick is sandwiched between the two cookies.
Melt chocolate chips in the microwave, one minute, then in 20 second increments, stirring until smooth.
Dip cookie pops in the melted chips, covering completely. Roll pops in red and green sprinkles and lay on waxed paper. Place in refrigerator to chill.
Makes 10 holiday cookie pops.
