Cookie-Making Tips

If you're not a cookie-making wizard, Christmastime can present a few challenges. Trying to shift gears into baking mode is hard! Here are a few tips when working with cookie dough:
- For easy rolling, divide cookie dough into portions and flatten each one slightly into a disc shape before chilling.
- To prevent sticking, lightly dust the rolling pin and the countertop with flour. Too much flour makes the dough dry, though, so don't over do it.
- Shape cookie dough into logs and wrap in parchment or waxed paper. To prevent flatting on one side, place each log inside an empty paper towel tube. Place the whole thing in a large, zipper-close plastic bag.
- Work ahead by shaping dough with a small ice-cream scoop. Lightly roll dough between your palms to create balls. Place the dough balls on a baking sheet and freeze until firm. Transfer to a zipper-close plastic bag to store. Allow 2 to 3 extra minutes baking time for frozen dough.
