What's an American equivalent of Cinco de Mayo? It's not Independence Day—it's Pearl Harbor Day! These days both remember famous battles in history.
Although Cinco de Mayo is not a national holiday in the United States, many communities celebrate the day with parades, banners, special classes and cultural displays of dancing and food.
Cinco de Mayo is the perfect time to create an international recipe. This recipe for salsa can be just the beginning. Once the salsa is ready, how about making some tacos or enchiladas?
This recipe does require some chopping with a knife. If your child isn't experienced with knives, you can pre-chop the foods and have them in bowls, ready to be added to the mix. Or, you can roughly cut the tomatoes and let your child use a plastic knife to finish preparing the ingredients.
One thing to note, however, is that jalapeño peppers contain volatile natural oils. If your child gets pepper oils on his hands and then puts his hands in his mouth or eyes, it will be very painful! If your child isn't wearing rubber gloves while handling peppers (always a smart idea) be sure he's fully aware that he needs to take great care around peppers.
Fresh Tomato Salsa
Ingredients:
5-6 ripe roma tomatoes, peeled and chopped
1/2 cup chopped green onions
1/4 cup chopped jalapeño peppers
1/3 cup chopped cilantro
2 cloves fresh garlic, minced (or to taste)
1/2 tsp. cumin (or to taste)
1/2 tsp. salt (or to taste)
1 Tbs lime juice
Directions:
Combine all ingredients and stir well. Chill and serve with chips, raw veggies or as an accompaniment to
