Tortilla Chicken Dip
Serves 6
Have you noticed that children love to DIP foods?
Ingredients:
3 cups cooked chopped chicken
1 cups grated reduced-fat cheddar cheese
1/4 cup chopped parsley
1/2 cup reduced-fat mayo
1 Tbs chopped onion
1/2 tsp cumin
1 sliced tomato
1 1/2 cups tortilla chips
Directions:
Preheat oven to 350°F. Combine chicken, 3/4 cup cheese, parsley, mayo, onion and cumin. Spoon into a 1 ½ quart casserole. Bake 25 minutes. Remove and top with tomatoes and remaining cheese. Arrange chips around the edge. Bake 10 more minutes.
