Spring rolls sound exotic, but they're actually very simple to make—and our recipe is healthier, because the rolls are baked instead of fried.

 

Think of spring rolls like you think of burritos. It's just meat and veggies rolled up inside a piece of bread. How simple is that?


So enjoy spring with a plateful of springtime's namesake: spring rolls!

 

Baked Spring Rolls

A Brookshire's Best Recipe

Serves 10

Prep time: 45 minutes; cook time: 30 minutes

 

Ingredients:

1/2 lb lean ground turkey or pork

1 Tbs peeled, minced fresh ginger

1/4 tsp salt

2 tsp sesame oil

2 pkgs shredded cole slaw mix

2 Tbs water

10 large spring roll wrappers

2 Tbs vegetable oil

 

Directions:

Preheat oven to 350° F.

Brown the meat, ginger, salt and sesame oil in a large, nonstick skillet. Remove meat to a bowl. Add cole slaw mix and water to the pan, stir fry until just limp. Mix with the meat. Brush each spring roll wrapper with oil. Turn over and put a small portion of filling in a diagonal line across the middle. Fold in the side corners, then roll up to make a neat tube.

 

Repeat with the 9 other wrappers.

 

Lay the finished spring rolls on a lightly oiled cookie tray.

Bake about 30 minutes, until golden brown.

Serve hot with plum sauce.
