Celebrate Cinco with Fajitas!Cinco de mayo is the day for fajitas, because this is a special day in Mexican history, and a fun day in American culture.

 

Remembering one of the famous battles in Mexican history helps all cultures remember what makes them unique, and often, what brought their ancestors to the United States.

 

Making fajitas isn't hard. It's a great opportunity to learn about skirt steak, which is a tough cut of beef that turns delicious when marinated and cooked quickly over high heat. Round out the dish with tasty toppings and tortillas and you'll have a dinner everyone will enjoy!

 

Classic Fajitas

A Brookshire's Best Recipe

Ingredients:

1 packet (1.25 ounces) dry fajita seasoning mix

1/4 cup water

2 Tbs lime juice

1 beef flank or skirt steak (1 ½ pounds)

2 bell peppers, cut into quarters

2 onions, cut into thick slices or wedges

12 small flour tortillas, warmed

Salt and pepper to taste

Your favorite fajita toppings (lettuce, chopped tomato, shredded cheese, guacamole, sour cream, olives, etc)

 

Directions:

Combine fajita seasoning, water and lime juice in a large zipper-top plastic bag. Add the steak and marinate in the refrigerator for several hours, up to overnight. Remove steak from marinade and discard marinade.

 

Cook steak on a grill or under the broiler. Cook for about 15 minutes for medium doneness. Grill vegetables about 10 minutes, turning occasionally, until crisp-tender.

 

Cut steak in half lengthwise, and then crosswise into thin slices. (If using skirt steak, carve diagonally across the grain into thin slices.)  Cut peppers into long strips, and coarsely chop onions.

 

Place steak slices on the warm tortillas. Top with vegetables. Season with salt and pepper, as desired and add any additional desired toppings.
