Brunch on a Budget! Do you want to have friends over for a party, but dread the cost of feeding everyone?

 

Don’t make it a dinner party; instead, host a brunch party! Eggs are much cheaper than steak, so an egg casserole or frittata will feed a crowd for just a few dollars!

 

Accent with some fruit and the meal’s complete! Eggs are a complete protein—perfect for any meal—but if you have meat lovers in your group, you can easily add a half-cup of cooked sausage or bacon as you add the egg mixture.

 

Vegetable frittata

Low  Carb!

Serves 4

Prep time: 15 minutes; Cook time: 15 minutes

 

Ingredients:

1 lb spinach leaves, chopped
1 Tbs olive oil

1 cup onion, chopped

1 cup bell pepper

1/2 cup chopped mushrooms

1 garlic clove, minced

2 cups egg beaters

2 Tbs  milk

1 (2 oz) envelope enchilada sauce

1/3 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

 

Directions:

Preheat the oven to 400◦ F. In a medium covered saucepan, combine spinach and 1/4 cup of water, cook until spinach wilts. Drain water and set aside. In a mixing bowl, whisk together egg, milk, enchilada sauce and cheeses. In a large, oven-safe skillet, sauté onions, bell pepper, mushrooms, garlic and oil. Add spinach to the onion mix. Pour egg mixture over spinach mixture. When mixture is half set, put the skillet in the oven. Bake for 13-15 minutes, or until puffy and golden. Cut into quarters.
