Family Matters: BUSH’S Chili Magic Chili


Football season has officially arrived and if your family is like mine, we live and breath football, from early morning practices, to hometown games and Monday Night Football!

When watching the game on the big screen my boys want a real “man’s meal”. Their most requested “man’s meal” is Chili.

I use this simple recipe that scores me points every time!
BUSH’S Chili Magic Chili
Ingredients:
1 lb lean ground beef or turkey
1 cup onion, chopped 
1 (14.5 oz) can diced tomatoes
1 (15.5 ounces) can BUSH’S Chili Magic Chili Starter, any style
shredded cheddar cheese
tortilla chips
Directions:
Sauté the onion until softened. Add ground beef or turkey and brown. Add diced tomatoes and BUSH’S Chili Magic Chili Starter. Stir, cover and simmer gently for 15 minutes. Serve garnished with cheddar cheese and tortilla chips.

When I was in grade school, I loved it when my mother would pack “really cool stuff” in my lunchbox! Now as a mom, I am more concerned about packing a healthier lunch for my daughter, than giving her all the “cool stuff” she would like.

Family Matters: Modified Ice Cream Bar Pie


Some of you have been asking me how my son’s ice cream birthday cake turned out…let me tell you, my new teenager was thrilled with his ice cream bar pie!

I had to adjust the original recipe from the Celebrate Cooking magazine because my son does not eat chocolate. Yes, you read that right he does not like chocolate! Apparently he did not inherit my taste buds. 

The dessert was easy and took only minutes to make, leaving me with lots of time to enjoy his party!
Here are my modifications to the Ice Cream Bar Pie:
Ice Cream Bar Pie
Prep Time: 15 minutes, plus chill time
Serves 18
Ingredients:
1 (12 Ct) box Blue Bunny Birthday Party Ice Cream Sandwiches (it uses vanilla wafers)
1 (12 oz) tub fat-free frozen whipped topping
1 (16 oz) pkg frozen sweetened strawberries or fresh strawberries
Directions:
In a 13×9 dish, line the bottom of dish with ice cream sandwiches. Spread the thawed frozen strawberries over sandwiches. Spread whipped topping over frozen strawberries. Freeze pie for 30 minutes. Top with fresh strawberries before serving.

With the kiddos going back to school this week, I need to get stocked up on breakfast, lunchbox and snack foods. If your school mornings are anything like mine, they can get a little crazy! When we are having, you know, ‘one of those mornings’ – it’s smoothies for breakfast. Smoothie are quick, easy to make and nutritious.

I start with Food Club Yogurt; which happens to be on sale this week, orange juice or milk, frozen strawberries, a banana, local honey or Stevia and a few ice cubes.

Mix in a blender, pour into to-go cups and we are out the door.  

Here are a few of my favorite smoothie mix-ins used in different combination:
Strawberries
Bananas (fresh or frozen)
Blueberries
Apple juice
Vanilla
Vanilla yogurt
Stevia
Local honey
Nutmeg
Milk
Orange juice
Flax seed
Rice protein powder
Frozen mixed berries

For several years now, when the weather is right, I take my kids camping. We pitch the tents, unpack the coolers and build a fire every night. Of course, our cookouts are not complete without the traditional s’mores! My kids love to toast their own marshmallows because they both want them toasted differently; one—lightly toasted and the other—fire charcoaled! It’s really amazing how something so simple as s’mores can bring the family fun time together.

Family Matters: Ice Cream Bar Pie!


For almost 13 years now, once a year, I go all out to bake and decorate a birthday cake for my son and it’s not your everyday sheet cake either. I plan the cake around the theme of the party, buy new shaped cake pans, new colors of icing, all the ingredients and stay up all hours of the night trying to out do myself from the previous years! In a couple of days he is going to be a teenager and so, as usual, I asked him what kind of cake he wanted for his party.  Goodbye to Batman, Spiderman and Sponge Bob themed cakes for him, he wants an ice cream cake!

How do I even begin to make an ice cream cake? Luckily, the July Celebrate Cooking magazine has an ice cream bar pie that I’m thinking about trying for his party. I’ll keep you updated and let you know how it turns out or if I modified the recipe any. Best of all, I shouldn’t have to be up all hours of the night baking and decorating!

Ice Cream Bar Pie
Prep Time: 15 minutes, plus chill time
Serves 18

Ingredients:
1 (12 Ct) box Food Club Ice Cream Sandwiches
1 (12 oz) ctn fat-free frozen whipped topping
2 favorite candy bars (Snickers, Butterfinger,Reese’s or Toffee Bar)
1/4 cup caramel syrup

Directions:
In a 13×9 dish, line the bottom of dish with ice cream sandwiches. Spread whipped topping over sandwiches. Crush your candy bar and sprinkle over whipped topping. Drizzle caramel syrup over ice cream pie. Freeze pie for 30 minutes.

Nutritional Information Per Serving (without candy bar): Calories: 161,
Fat: 6 g (3 g Saturated Fat), Cholesterol: 16 mg, Sodium: 125 mg,
Carbohydrates: 24 g, Fiber: 0 g, Protein: 20 g

Family Matters: Summertime and your kids


Summer time is here, the kids are at home all day and they seem to be always hungry!

I want to help my kids make healthier choices when snacking.

Here are a few things that I do at home that seem to work for my kiddos: 

  

  1. Keep a basket of fruit on the kitchen cabinet at all times filled with apples, oranges, bananas and fruit leathers
  2. Keep individual bottled water in the fridge
  3. Place yogurt tubes in the freezer for a healthier frozen treat
  4. Frozen grapes also make a cool summer snack 

You’ll be surprised at your kids’ choices! When we are heading out the door for the day, I tell my kids to grab a snack and something to drink…they usually come to the car with a piece of fruit and bottled water. Yeah, I’m a pretty good Mom!

Most of the time I cook breakfast for my kids because I’m a fanatic about starting the day off with a good breakfast. However, there are mornings when I just cannot get it together…the back up plan…Cheerios with local honey on top. Good thing Cheerios is on sale, I foresee a busy week coming up!



Family Matters: Homemade Ice Cream


So I took the family to my parents this weekend for a family cookout. My Dad and brothers took care of the grilling, my Mom made the side dishes and I was in charge of bringing the desert. I wanted to make something fun…homemade ice cream would be perfect!

I mixed up all the ingredients at home the night before and poured into a jug. So, all I had to bring with me was the jug with the mixture, rock salt, ice and the electric ice cream maker. The ice cream was a hit and so simple to make!

Homemade Vanilla Ice Cream:

Ingredients:
2 cups half & half
2 cups whole milk
3/4 cup sugar
2 tsp vanilla extract
pinch of salt

Directions:
Wisk together all ingredients until well blended. Pour into ice cream maker and process according till it is soft frozen.

Enjoy!
