Healthy Living: Portobello Mushroom Pizza


Healthy Living Mushroom PizzaHow fitting is it that we have a Tuesday “Healthy Living” blog post on the last day of 2013?

It’s fitting because tomorrow a huge percentage of you will make the resolution to lose weight, exercise more or lead a healthier lifestyle, or some combination of all three.

So, let’s start now! You can make these tonight while you’re waiting for the ball to drop or you can dish up a few while you’re watching the game tomorrow.

Either way, using a portobello mushroom is probably healthier than eating a pizza crust, so go ahead and get a head start on your 2014 resolutions.

Portobello Mushroom Pizzas
Serves 4

Ingredients:
4 large Portobello mushrooms (3 inches)
4 tsp olive oil
salt and pepper, to taste
1 cup marinara or spaghetti sauce
12 slices pepperoni, finely chopped
1/4 cup chopped green pepper
1 1/2 tsp Italian seasoning, divided
1 cup shredded Italian cheese blend

Directions:
Remove and discard stems and gills from mushrooms; brush caps with oil. Sprinkle with salt and pepper. Place rounded sides down on an ungreased 15 x 10 x 1 baking pan. Bake uncovered at 400° F for 5 minutes.

Meanwhile, in a small bowl, combine the marinara sauce, pepperoni, green pepper and 1 1/4 teaspoons Italian seasoning. Spoon mixture onto mushrooms. Sprinkle with cheese and remaining Italian seasoning. Bake for 8-12 minutes, or until mushrooms are tender and cheese is bubbly.
