Pumpkin seeds are a fun and healthy way to get a substantial dose of magnesium and dietary fiber. One cup of pumpkin seeds contains almost 200 percent of the US Recommended Dietary Allowance for magnesium. Now, you don’t want to eat a whole cup at a time (they’re high in fat, too) but one cup also contains 8 grams of fiber.
Raw pumpkin seeds are also high in vitamins K and E.
To reap the benefits without some of the downsides, sprinkle a few on a salad with your meal, and enjoy the crunch and fun addition to your food!
