Are things around your house finally settling down from all the hustle and bustle of the holidays? Well, it might slow down some but in general, lifestyles today keep families constantly on the go.
When we are so busy it’s nice to find recipes that give us a little extra time with our kids and less time in the kitchen. Below is a recipe for a quick dinner idea that our family enjoys any time of the year.
1 lb Ground Beef
1 can Food Club Sweet Corn
1 can Ranch Style Beans
1 can Rotel Diced Tomatoes
1 can Food Club Cream of Chicken Soup
2 pkgs Gladiola Cornbread Mix
Grated Food Club Cheese (if desired)
Brown the ground meat, then drain and add corn (drained), beans, rotel and cream of chicken soup. Mix all these ingredients together in a bowl and pour in a 9” X 13” glass pan. Prepare cornbread as instructed on package and then pour it over the top of the mixture in the pan. Spread the cornbread evenly on top and then bake in oven per directions on the cornbread package. Casserole is done when cornbread is brown. Spoon casserole in to bowls and serve with grated cheese on top (if desired).
