Rotisserie chicken makes dinner a whole lot easier and faster!
Rotisserie Chicken Nachos
Prep Time: 20 minutes
Cook Time: 5 minutes
1/4 cup chopped onions
2 jalapeño peppers, diced
2 garlic cloves, minced
1 Tbs Food Club Extra-Virgin Olive Oil
1 tsp Food Club Cumin
2 Tbs Food Club Tomato Paste
2 cups shredded Brookshire’s Rotisserie Chicken
24 corn tortilla chips
1 cup 2% shredded Mexican cheese blend
1/2 cup Greek yogurt
1 firm avocado, diced
24 cilantro sprigs
Preheat oven to 350°F. In a skillet, combine onions, jalapenos, garlic and olive oil; sauté until vegetables are tender about 5 minutes. Sprinkle cumin over vegetables and stir vegetables until well combined. Stir in tomato paste and let cook for 4 minutes. Add shredded chicken and cook until chicken is warm.
Place chips onto a baking sheet. Sprinkle cheese on top of each chip and top with chicken mixture. Bake chips for 5 minutes. Top each chip with Greek yogurt, avocado, and a sprig of cilantro.
