Ring in the new year with good-luck black eyed peas!
Prep time: 15 minutes
1/2 red onion, chopped
1 green bell pepper, chopped
2 jalapeno peppers, chopped
1 tablespoon minced garlic
1 pint cherry tomatoes, quartered
1/2 cup bottled Italian salad dressing
1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas, drained
1 bunch chopped fresh cilantro
Mix all ingredients and chill until serving time. Serve with tortilla chips for dipping.
